Christmas Cookies!

I think I may have created a Christmas tradition this year – Junior Mint Cookies; Brian likes them, I like them, Malaki likes them… I’m sure Cora would as well.  They don’t look like much, but the taste…

Here is the recipe:

  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup HERSHEY’S Cocoa
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 bag Nestle’s Dark Chocolate & Mint chips
Pre-heat oven to 375 degrees.
Cream together the butter, sugars, vanilla, salt & eggs.
Mix in the Cocoa, then the flour and soda.
Mix in a bag of Nestle’s Dark Chocolate & Mint chips (these are seasonal).
Bake for about 8-9 minutes.
(I don’t make all the cookies at once.  So are like me, and like to save some for later: refrigerated dough should be baked at 400 degrees for 8-9 minutes)

This recipe is the “Design Your Own Chocolate Cookie” from Hershey’s website it’s just adapted a little bit.
